Mine, from what I've tasted, is provolone.
However, that's a wee bit expensive, so my second favorite type of cheese would probably be mozzarella XD especially when it's melted <3

Trying to decide between pepper jack, brie, or extra sharp cheddar (the sharper the better). In some ways pepper jack and brie taste better, but the cheddar is good for most everything.

Any cheese I like is bound to be a favourite. I mean, it's cheese. As long as it's not some nasty veiny bleu shit, how can you go wrong?
If you're wondering, the list would probably include cheddar of all sorts (especially smoked cheddar (http://knowyourmeme.com/memes/nyoron)), mozzarella, gouda, swiss, American, and colby jack.
Does cream cheese count? Because cream cheese is especially amazing.

Cheddar or Colby Jack. Love both kinds.

Pepper Jack is tits as is Colby. But I really like Mozzarella. Mostly because it's so good on pizza.

Cheddar. Definitely cheddar.
Of course, I love cheese in general quite a lot. Adding cheese to just about anything makes it better, and there is simply no such thing as "too much cheese." Hardly surprising, though, as half my family is from Wisconsin.

As a cultural preference my favorite cheese of course is Bulgarian sheep feta (white brined cheese).
However I cannot say that I have a general favorite cheese since there are sooo many varieties out there which I really like.
My choice of the month (obtained at Di Bruno brothers): Oriol (very nice semi-soft spanish cheese made with buffalo milk), Beer washed St. Nectaire (from Auvergne, France) and Amazing Acres Sea Smoke (sea ash goat chevre from Elverson, PA).

Muenster is so many kinds of awesome. It is my favorite cheese to put on a sandwich or burger.

It's a tossup between brie (with crackers or small pieces of bread), or pepper jack for sandwiches.

Actually, I like a nice pepper jack, pretty much any smoked cheese. In Ye Goode Olde Dayes I had built a cold smoker and made my own. It was AMAZING.

Sharp provolone, which actually has a very different texture and taste than normal provolone. It's hard and tastes very similar to parmesan.

I admit to not liking provolone because more often than not it's smoked. I hate smokey things. I would be more than happy to try a 'plain' provolone tho.

I can't stand smoked cheese, either. When I was in Germany, I didn't know the language well enough to know what I was getting, ended up with the worst possible cheese. All you could taste was the smokey flavor. I do like Butterkaese, though. And sharp cheddar, and pepper jack, and baby swiss.

I love cheese. I like all cheeses (except the blue variety), but my favorites are super sharp cheddar, Havarti and smoked Gouda.

I do agree with American "cheese" and cottage cheese being nasty. Bleh.

Stichelton - Like a good Stilton but properly unpasteurised - one of the best blue cheeses around - or a good bleu cheese - be it french such as a st agur, bleu d'avergne or rochefort, or a yorkshire or scottish blue.
Also a good vintage/extra mature farmhouse cheddar is the business.

This. Cheddar is great for grilled cheese. Especially with sundried tomatoes.

No. You all simply must try Bulgarian feta (with or without greek food, since that doesn't matter). :) In comparison to bulgarian feta, the greek variant is dry, with rough unpleasant texture, and undistinguished flavor. :)

But that's why you have the glass of pinot!
Also German cheese is great too. It's simple but goes great with some prune cakes and chocolate.

Re: Provolone
There's actually a lot of non-smoked provolone being sold here. Every Subway I've been to uses it.
I've tried smoked cheese before. Didn't much care for it.

I used to love American cheese. And I still do on cheap hamburgers and stuff.
...But heaven help me if I have to eat one more grilled cheese sandwich. I haven't eaten one in almost a year and I still get sick at the thought of eating one.
The funny thing is? I used to LOVE them.
