Being completely colorblind, or trying to, isn't realistic either, because it glosses over differences that can affect interpersonal relationships.
The ideal might be to understand, accept, and work with those differences, without focusing on them or stereotyping people based on them... However, I foresee a glitch: Humans, as a species, love to be able to categorize and label everything. From subspecies of bacteria and types of rock to emotions and ideas, humans want a concrete verbal symbol to represent the minutia of their world. But that desire also makes us very prone to stereotyping.
Stereotyping is almost certainly a survival tactic, it's a form of conditioned response so that you don't have to think about the situation if you might be in danger. And people are, by and large, mentally lazy. So getting them to understand that people are different along cultural or racial lines without them forming stereotypes is going to be really, really difficult.
