Yep. While you only have varying shades of grayscale, different colors have different shades. Bright, clashing tones allowed for you to get certain items to stick out against their surroundings. Same reason why horror films used chocolate syrup for blood: it comes out very dark, while actual red is light gray and blends in with skin tones.

If I remember correctly, when filming Doctor Who in black and white, the Dalek's had red on them because red makes better black in black and white or something like that.

In black and white, black just comes out as black. Red's shade varies on how dark it is, but it will generally always come out as a gray tone.
