As far as I've understood, the hatred against gingers started in Britain because the Brits didn't like the Irish and there Irish were stereotypically presented being red haired. (Apparently at least at the time red hair was more common in Ireland.) Then after a while it sorta got stuck that being red haired was bad in itself, even if you weren't Irish. And at some point all those "gingers have no souls" and other stuff grew.
The ginger hate has gotten pretty weird along the years, but it basically started as "we hate those other people for not being our kind of people." And the only distinctive thing, that would separate "them" from "us" was the red hair. So basically, it is just one type of racism/bigotry. There is no need for the groups to have different skin colour for there to be racism, just as long as you can think of SOMETHING that helps you divide people into different groups.
